Tacos Al Pastor, a cherished Mexican Street Food, bear a rich history that traces its roots to the influence of Lebanese immigrants in Mexico. The dish’s genesis can be attributed to the shawarma technique brought by these immigrants, involving layers of marinated meat vertically stacked on a vertical rotisserie.
In the 1960s, this Middle Eastern culinary technique underwent a flavorful transformation in the Mexican context. The Lebanese-style shawarma was adapted to local tastes, utilizing pork as the primary meat and infusing it with achiote, guajillo chilies, and other traditional Mexican spices.
Tacos Al Pastor gained immense popularity and became a staple in Mexican street food culture. The distinctive preparation method involves thinly slicing the seasoned, marinated pork from the vertical spit, creating tender and flavorful meat with a slightly crispy exterior.
The significance of Tacos Al Pastor extends beyond its taste; it represents a cultural amalgamation and the dynamic evolution of Mexican cuisine. Often served with pineapple, onions, cilantro, and a squeeze of lime, these tacos offer a sensory experience that captures the essence of Mexican street food, blending savory, sweet, and citrusy flavors.

Chuy’s Tacos Al Pastor Recipe
Ingredients
- 10 - 12 pounds Pork Butt
- 1 quart fresh-pressed Pineapple Juice
- 1 tablespoon Kosher Salt
- 2 tablespoons Salt
- 1 tablespoon Chili Powder
- 1 tablespoon Cumin
- 1 cup Red Chile Sauce
- 1 cup Fresh Roasted Green Chiles diced
- 2 medium Yellow Onions finely diced
- 1 bunch, about 3 ounces Cilantro stems removed and discarded, then leaves chopped
- Twenty Four 5-inch Flour Tortillas
Instructions
Pastor Pork and Marinade
- Cut pork butt into 2 x 3-inch cubes. Do not remove the fat.
- Place in a large baking dish.
- In a large bowl, add pineapple juice, both salts, chili powder, cumin, red chile sauce and green chiles. Stir to combine.
- Pour mixture over pork butt. Toss together to coat pork thoroughly.
- Cover baking dish with aluminum foil and make sure the pan is air-tight.
- Place in refrigerator to marinate overnight, for at least 12 and up to 24 hours.
Pastor Pork Cooking and Shredding
- When ready to cook Pastor Pork, preheat oven to 325°F.
- Take covered baking dish from oven and place in preheated oven. Cook for approximately 2 1/2 - 3 hours, until the internal temperature is 200°F.
- Remove from oven, uncover and allow meat to rest for 10 minutes.
- Shred meat by pulling it apart by hand or with forks. The pieces should be torn into small bite-size pieces. When shredding, large pockets of fat should be discarded. Small amounts of fat are fine and add to the flavor.
Onions and Cilantro
- In a medium bowl, add prepared onions and cilantro. Mix to combine.
Tacos al Pastor
- Heat flour tortillas in a skillet on the stovetop or in the microwave. Do not toast, just heat.
- Place 1 or more warm tortillas on each serving plate.
- Add about 1/4 cup of pork mix to the center of each tortilla.
- Scatter each with 1 tablespoon of onion and cilantro mix over meat.
- Serve with rice, refried beans and guacamole.
