Uncle Julio's Cozumel Shrimp Tacos Recipe
Ingredients
- 1/8 cup Olive Oil
- Uncle Julio's Achiote Orange Shrimp Marinade (See Box Below for a Link to this Recipe)
- Uncle Julio's Mango Jicama Slaw (See Box Below for a Link to this Recipe)
- Uncle Julio's Mango Habanero Sauce (See Box Below for a Link to this Recipe)
- 2 pounds 26/30 Shrimp peeled, deveined and tails removed
- 2 cups fresh Pineapple cut into 1/2-inch dice
- Twelve 6 - 8-inch Corn Tortillas
- Chopped Cilantro to garnish
- Finely diced Red Bell Pepper to garnish
Instructions
- Prepare Uncle Julio's Achiote Orange Shrimp Marinade using the recipe linked to in the box below. Place in a large sealable bowl.
- Add shrimp (thawed, if bought frozen) to marinate. Toss to coat fully.
- Seal and place in refrigerator to marinate for 2 hours or overnight.
- Prepare Uncle Julio's Mango Jicama Slaw and Uncle Julio's Mango Habanero Sauce using the recipes linked to in the box below. (Both of these can be done in advance. Store slaw for up to 1 day and sauce for up to 1 week in tightly sealed containers, in the refrigerator, until ready to use.) Set aside.
Cook the Shrimp
- Add olive oil to a large skillet or sauté pan. Place over high heat.
- As soon as the oil is hot and shimmering, add shrimp.
- Sauté until shrimp is nearly cooked (Careful, it will happen very quickly!)
- Add pineapple. Toss and continue to cook for about 30 seconds.
- Remove shrimp to a plate or bowl.
Build Uncle Julio's Cozumel Shrimp Tacos
- Heat a corn tortilla in a hot pan for 10 to 15 seconds on each side.
- Remove heated tortilla and place onto a plate.
- Add prepared Uncle Julio's Mango Jicama Slaw to the center.
- Place several shrimp and pineapple chunks on top of slaw.
- Drizzle with prepared Uncle Julio's Mango Habanero Sauce.
- Top of with fresh chopped cilantro and diced red bell pepper.
- Repeat with additional tortillas.
- Serve hot.
