The Old Spaghetti Factory Garlic Mizithra Spaghetti Recipe
Ingredients
- One 8-ounce box Spaghetti
- 2 slices Bacon chopped into small pieces
- 1 cup Button Mushrooms cleaned and sliced
- 3 teaspoons minced Garlic
- 4 ounces Browned Butter (See Box Below for this Recipe)
- 3/4 cup grated Mizithra Cheese
- Chopped Parsley fresh or dried, to garnish
Instructions
- Prepare Browned Butter according to the recipe in the Box below.
- Prepare pasta according to package directions. Drain. Set aside.
- Place a large skillet over medium heat.
- When skillet is hot, add bacon slices. Sauté for about three minutes.
- Add mushrooms. Sauté for 45 seconds.
- Add garlic. Sauté for 30 seconds.
- Add 1/2 cup Mizithra cheese and prepared browned butter. Mix well.
- Add prepared spaghetti to the large skillet. Toss with tongs to coat and mix.
- Serve immediately, each plate topped with a sprinkling of the remaining Mizithra cheese and parsley.

Browned Butter Recipe
Ingredients
- 1/2 cup Butter
Instructions
- Cut butter into cubes.
- Place in a small saucepan with a light-colored interior (this makes it easier to gauge the color of the butter as it browns).
- Place pan over medium heat. Cook until it comes to a low boil, stirring frequently with a whisk, about 3 minutes. Continue to cook, while stirring constantly to prevent residue from sticking and overflowing, about 4 more minutes or until foam subsides.
- Continue to cook until the liquid turns an amber color, 1 to 2 minutes longer.
- Remove from heat. Set aside 3 to 5 minutes to let the sediment settle to the bottom of the pan.
- Pour the browned butter through a strainer into a small bowl. Discard the sediment.
- Use immediately, or store in a tightly covered container, in the refrigerator, until ready to serve.
