Texas Roadhouse Prime Rib
NOTE – Note that this is a 3-day recipe. The Marinade should chill overnight to get the right consistacy for spreading then the Prime Rib must marinate overnight to get the right flavor.
Also, per Texas Roadhouse, feel free to adjust the Marinade to your own preferences or even use a different recipe altogether.
Texas Roadhouse Prime Rib Recipe
Ingredients
- 1 whole uncut choice Ribeye Loin (6 - 8 pounds or about 12 ounces per person)
Marinade
- 2 tablespoons freshly ground Black Pepper
- 2 tablespoons Sugar
- 1/2 cup kosher Salt
- 1/4 cup chopped Garlic
- 1/4 cup Liquid Smoke
- 1/4 cup Soy Sauce
Instructions
Two Days Before Cooking
- Add all marinade ingredients to a sealable mixing bowl. Mix well. Seal tight and place in refrigerator to chill overnight.
One Day Before Cooking
- Place the prime rib on a rack in a large pan.
- Cover one side with 1/2 of prepared marinade mixture. Rub it all over that side.
- Turn prime rib over and pour the remainder of marinade on. Rub it all over that side.
- Cover pan with plastic wrap and refrigerate overnight.
Day of Cooking
- Adjust oven shelves - placing one shelf on the very bottom and one shelf in the center of the oven for the meat.
- Fill a metal pan with water and place it on the bottom shelf of the oven.
- Preheat oven to 300°F.
- Uncover the roasting pan and place on the center shelf.
- Cook for 1 hour.
- Check the internal temperature of the meat (See Steak Degrees of Doneness Box below for Cooking Temperatures). If not yet up to desire temperature, continue cooking and checking temperature every 30 minutes until done.
- Once meat is finished cooking remove from the oven.
- Let meat rest for 15 - 30 minutes before carving.
- Carve into steaks of your desired thickness and serve.

Steak Degrees of Doneness
- Rare: 95 – 105°F. Cool deep red center.
- Medium Rare: 115 – 125°F. Warm red center with a hint of pink.
- Medium: 130 – 140°F. Warm pink center.
- Medium Well: 150 – 160°F. Some pink in the center but mostly cooked through.
- Well: 165 – 175°F. No pink, cooked all the way through.
