Maggiano's Little Italy Mussels Tuscan Style Recipe
Ingredients
- 1 ounces Extra Virgin Olive Oil
- 1 teaspoon chopped Garlic
- 15 pieces Prince Edward Island Mussels cleaned
- 8 ounces White Wine
- 3 ounces White Cannellini Beans
- 1 ounces Sun-Dried Tomatoes chopped
- 1 tablespoon fresh Basil chopped
- 1 tablespoon fresh Parsley chopped
- 1 tablespoon Butter
- Salt and freshly ground Black Pepper to taste
- Half-slices Bread, lightly toasted in Garlic Oil for garnish
Instructions
- Place olive oil in a sauté pan. Place pan over medium heat.
- When oil is hot, add garlic. Cook for 30 seconds, until lightly toasted
- Add cleaned mussels. Cook for another 30 seconds.
- Add white wine. Steam until mussels open in covered sauté pan on medium heat.
- Add beans, tomatoes, basil and parsley. Cook for 1 minute on low heat. Add butter, salt and pepper. Cook until butter is melted.
- Remove from heat.
- Using tongs, place mussels in a shallow dish so that mussels face upward.
- Pour cooking sauce over the top.
- Garnish with garlic toast.
- Serve immediately, hot.
- You may want a little toasted baguette to enjoy the rest of the sauce you created.
