Red Lobster
By 1970, the chain had expanded to five locations and caught the attention of General Mills, which acquired it in 1970. Under General Mills’ ownership, Red Lobster continued to grow, eventually becoming the largest seafood restaurant chain in the world. In 1995, General Mills spun off its restaurant division, including Red Lobster, into a new company named Darden Restaurants, Inc., which also owns other popular brands like Olive Garden and LongHorn Steakhouse.
Red Lobster’s popularity can be attributed to its extensive menu, which features a variety of seafood dishes, including their famous Cheddar Bay Biscuits, shrimp, crab, and lobster. Some of the favorite dishes among customers include the Ultimate Feast, a combination of lobster tail, snow crab legs, shrimp scampi, and Walt’s Favorite Shrimp. The chain also offers seasonal promotions, such as Lobsterfest, Crabfest, and Endless Shrimp, which attract many diners.
As of 2024, Red Lobster operates over 700 locations worldwide, including in Canada, Mexico, Japan, and China. The brand continues to innovate and adapt to changing consumer preferences, such as introducing sustainability initiatives to ensure responsible sourcing of seafood. Its commitment to quality and consistency has solidified Red Lobster’s position as a leader in the seafood dining industry.

Hush Puppies
Hush Puppies are a beloved Southern delicacy, often served as a side dish at fish fries, barbecues, and seafood restaurants. These deep-fried balls of cornmeal batter are known for their crispy exterior and tender, flavorful interior. The exact origins of hush puppies are somewhat murky, but they are steeped in Southern folklore and tradition.
One popular legend suggests that hush puppies were created during the Civil War when Confederate soldiers would fry up bits of cornmeal and toss them to their dogs to “hush the puppies” and prevent them from barking and giving away their position. Another tale attributes their creation to Southern fishermen and hunters who would fry cornmeal batter to quiet their barking dogs during cookouts.
Regardless of their true origin, hush puppies have become a quintessential part of Southern cuisine. Their popularity soared in the 20th century, especially in the Southern United States, where they are commonly paired with fried catfish, shrimp, and other seafood dishes. They have also found a place in the broader American culinary landscape, celebrated for their simple yet satisfying flavor.
Hush puppies are cherished not only for their taste but also for their cultural significance. They embody the resourcefulness and creativity of Southern cooks, who transformed basic ingredients into a beloved treat. Today, hush puppies are enjoyed in various forms, with some recipes incorporating onions, peppers, or spices to add extra flavor. Their enduring appeal lies in their crunchy texture, comforting taste, and the sense of tradition they bring to any meal.
