Noodles & Company Cucumber Tomato Salad Recipe
Make our Noodles & Company Cucumber Tomato Salad Recipe at home. This refreshing salad is easy to make. Be sure to make this In Season for the very best taste.
Ingredients
- 2 tablespoons Olive Oil
- 1 tablespoon Toasted Sesame Oil
- 2 tablespoon Apple Cider Vinegar
- 1 teaspoon Honey
- 1/4 teaspoon ground Ginger
- 1 - 3 dashes Chili Powder to taste
- Pinch Salt to taste
- 1/2 large Tomato chopped into wedges
- 1/2 large Cucumber sliced into 1/2 lengthwise, seeds removed, then sliced thinly.
- 1/4 Red Onion sliced thinly
- 1/2 teaspoon Sesame Seeds
- Freshly grated Ginger to top
Instructions
- In a small bowl combine olive oil, sesame oil, vinegar, honey, ground ginger, chili powder and salt. Whisk to combine.
- Taste. Add more salt and chili powder, to taste, if needed. Set aside.
- To a large serving bowl, add prepared tomato, cucumber and onion.
- Pour dressing over the top. Let sit for at least 5 minutes or more to marinate.
- Before serving, sprinkle with sesame seeds and dust with grated ginger.
- Serve cold.
