Chevys Fresh Mex Chipotle Purée
The best Mexican restaurants and chefs have a secret, mysterious, smoky, earthy, spicy — just-plain-addictive! — ingredient. You know the one? It’s that special something that your Mexican dishes at home never quite seem to match.
Well, this is it.
Make up a batch of Chipotle Purée with this easy recipe, add a small bit to any Mexican or TexMex dish during the cooking and can have instant authenticity any time you want it.
Chipotles
Chipotles (chee-pote-lays) are jalapeño chiles that have been slowly dried over smoke. You can find them in Mexican markets and many supermarkets, if you want to make this purée from scratch like they do at Chevys Fresh Mex. Here is the recipe.

HOWEVER, according to Chevys Fresh Mex, there is an even easier way to make this magical sauce…
Chevy’s Fresh Mex Instant Chipotle Purée Home “Recipe”
Buy a can of high-quality Chipotles en Adobo – these are chipotles marinated in a saucy paste of vinegar and spices – and simply purée the entire contents in a blender. Boom! Instant Chipotle Purée.
Says Chevys Fresh Mex –
This is one of those rare occasions when something from a can tastes just as good as what you’d make from scratch. We can’t do it, because of the whole “no cans” thing. But you…uh…can.
