NOTE – Read the instructions COMPLETELY before starting to prepare the Cheesecake (This is a good idea for EVERY RECIPE) – Several steps can be done simultaneously.
Cheesecake Factory Chocolate Chip Cookie Dough Cheesecake Recipe
Ingredients
Chocolate Wafer Cookie Crust
- 1 1/2 cups finely crushed Chocolate Wafer Cookies
- 2 tablespoons White Sugar
- 1/4 cup Butter melted
Chocolate Chip Cookie Dough
- 1/4 cup Butter
- 1/4 cup packed Brown Sugar
- 1/4 cup White Sugar
- 2 tablespoons Water
- 1 teaspoon Vanilla Extract
- 1/2 cup All-Purpose Flour
- 1 cup Semisweet Chocolate Chips
Cheesecake
- 1 cup White Sugar
- Two 8-ounce packages Cream Cheese diced
- 1 cup Sour Cream
- 3 Eggs
- 1 teaspoon Vanilla Extract
Topping
- 1 cup Sour Cream
- 1 teaspoon Vanilla Extract
- 2 teaspoons White Sugar
Instructions
Chocolate Wafer Cookie Crust
- Preheat oven to 350°F.
- Add chocolate wafer cookie crumbs, 2 tablespoons white sugar and 1/4 cup melted butter to a bowl. Mix well.
- Transfer mixture to 9 inch springform pan. Press firmly into the bottom and 1/2 inch up the sides to from a crust.
- Place in preheated oven and bake for about 8 minutes.
- Remove crust and set aside. Leave oven on.
Chocolate Chip Cookie Dough
- In a medium bowl, add 1/4 cup butter, brown sugar and 1/4 cup white sugar. Beat until well mixed.
- Stir in water and 1 teaspoon vanilla.
- Add flour and semisweet chocolate chips. Stir until combined. Set aside.
Cheesecake
- In a food processor or with a mixer, beat 1 cup of the white sugar and cream cheese until fully combined.
- Add 1 cup sour cream, eggs, and 1 teaspoon of the vanilla. Mix well.
- Pour cheesecake mixture into prepared crust.
- Drop cookie dough in 2 tablespoon portions evenly over the top of the cake, pushing dough beneath the surface.
- Place in preheated oven and bake for about 40 minutes. Cake will jiggle slightly in center.
- Remove finished cake from oven.
Topping
- Add 1 cup sour cream, 1 teaspoon vanilla and 2 teaspoons white sugar to a medium mixing bowl. Mix until smooth. Set aside.
Top and Serve
- Spread topping over hot cake.
- Allow cake to cool to room temperature on the counter.
- Then place covered, in the refrigerator, for at least 4 hours to chill completely, or until ready to serve.
