This recipe is a good way to use up and enjoy any leftover Pot Roast.

Bob Evans Pot Roast Hash Recipe
Ingredients
- 2 tablespoons Butter
- Vegetable Oil or Olive Oil
- 1 pound Baby Red Potatoes diced small
- 1 Green Bell Pepper seeded and chopped
- 1 medium Onion chopped
- Salt and freshly ground Black Pepper to taste
- 1 cup Leftover Pot Roast (See Box Above for a link to our Bob Evans Pot Roast Recipe)
- 4 Eggs cooked to your preference (scrambled, sunny side up, over easy, etc.)
- 2 Green Onions sliced, to garnish
- Hot Sauce or Salsa of choice, if desired, to serve
Instructions
- Place butter into a large skillet. Place over medium heat to melt butter. Do not burn or scorch.
- When butter is hot, add potatoes. Cook until they just begin to brown, about 10 - 15 minutes.
- Add prepared bell pepper and onion. Season with salt and pepper, to taste. Cook until vegetables are crisp tender.
- Stir in leftover pot roast and heat through.
- Place on 2 serving plates and top each with eggs cooked to preference. Serve hot, sprinkled with sliced green onions and hot sauce or salsa on the side.
