Bertucci's Puttanesca Sauce Recipe
Ingredients
- 6 ounces Extra Virgin Olive Oil
- 1 tablespoon chopped Garlic
- 2 tablespoons chopped Italian Parsley
- 2 tablespoons fresh Oregano Leaves
- 2 tablespoons Capers
- 1 cup Black Olives coarsely chopped
- 3 cups diced Tomatoes
- 2 Anchovies chopped
- Salt and freshly ground Black Pepper to taste
- 1 cup reserved Pasta Cooking Water
Instructions
To Prepare when Cooking or In Advance
- Place all prepared ingredients, except pasta cooking water, into a large bowl. Mix well.
- Store, covered, in the refrigerator, until ready to serve.
To Finish when Cooking
- Cook pasta per recipe or according to package directions. When draining, catch pasta water in a bowl or cup. Measure out 1 cup.
- Place prepared puttanesca sauce and reserved pasta water in large sauté pan.
- Place pan over medium heat and heat to hot.
- When hot, add prepared pasta and mix well.
- Serve hot.
