Ingredients

• 2 teaspoons Extra Virgin Olive Oil to coat vegetables
• 6 large Tomatoes tops and cores removed
• 1 - 3 Jalapeños to taste (1 for mild, 2 for medium, 3 for hot), stem end removed
• 1 Onion peeled and quartered
• 6 cloves Garlic peeled
• 1 - 3 Adobo Peppers plus 1 - 3 tablespoons Adobo Sauce from can to taste
• 1/2 cup Cilantro
• 1 teaspoon Salt
• Freshly squeezed Juice of 1 Lime or more, if desired

Instructions

• Preheat grill to medium heat.
• Pour olive oil into a large bowl.
• Add tomatoes, jalapeños, onion and garlic to olive oil. Toss to coat.
• Place vegetables on grill. Cook, turning frequently, until charred, but not falling apart.
• Place charred vegetables into a blender. Add adobo peppers and sauce, cilantro, salt and 1/2 of the lime juice. Blend until smooth.
• Pour salsa into a bowl.
• Taste. Add more salt and more lime juice, if needed, to taste.
• Serve with your favorite tortilla chips.
