Abuelo’s Mexican Shrimp Cocktail Recipe
Ingredients
Shrimp
- 1 pound Medium Shrimp peeled, deveined and cooked
- 1 tablespoon Olive Oil
- Salt and Freshly Ground Black Pepper to taste
Cocktail Sauce
- 1 cup Ketchup
- 1/4 cup Fresh Lime Juice about 2 - 3 limes
- 1/4 cup Orange Juice
- 2 tablespoons Hot Sauce such as Cholula or Valentina, adjust to taste
- 1/4 cup Cilantro finely chopped
- 1/4 cup Red Onion peeled and finely diced
- 1/2 cup Tomato finely diced
- 1/2 cup Cucumber finely diced
- 1 Jalapeño or Serrano Pepper seeded and finely diced
To Serve
- Guacamole store bought or homemade, of choice (There are Plenty of Good Recipes from Your Favorite Restaurants on this site)
- Cilantro Leaves
- Tortilla Chips or Crackers
Instructions
- Toss cooked shrimp with olive oil.
- Season lightly with salt and freshly ground black pepper. Set aside.
- In a large mixing bowl, whisk together ketchup, lime juice, orange juice and hot sauce until well combined.
- Taste. Adjust hot sauce to your desired level of spiciness and add more salt and pepper, if needed.
- Stir in chopped cilantro, red onion, tomato, cucumber and jalapeño. Mix well.
- Gently fold shrimp into the cocktail sauce, ensuring it’s evenly coated.
- Cover and chill in the refrigerator for at least 30 minutes to allow the flavors to meld.
- Spoon shrimp cocktail into individual glasses or a large serving bowl.
- Top with a dollop of guacamole.
- Add a sprig of fresh cilantro.
- Serve with tortilla chips or crackers for scooping.
