Roasted Tomato Jalapeño Salsa is a flavorful Mexican and Tex-Mex favorite made by roasting ripe tomatoes and spicy jalapeño peppers until charred and smoky before blending the salsa.
This roasting process intensifies the flavors of both the tomatoes and peppers, imparting a rich, earthy taste with a hint of heat from the jalapeños. When added to traditional salsa ingredients, like garlic, onions, cilantro and lime juice, these create a zesty and vibrant salsa with a smoky undertone.
Roasted Tomato Jalapeño Salsa can be served as a dip with tortilla chips, a topping for tacos or grilled meats or as a flavorful addition to various dishes, adding a delightful balance of sweetness and spice to your favorite Mexican and Tex-Mex foods.
Taco Cabana Roasted Tomato Jalapeño Salsa Recipe
Ingredients
- 1 pound Red Ripe Tomatoes
- 2 large fresh Jalapeños
- 3 cloves Garlic peeled
- 1/2 teaspoon Salt
- 1/2 small White Onion finely chopped
- 1/3 cup loosely packed chopped Cilantro
- 1 1/2 teaspoons Cider Vinegar
- Salt and freshly ground Black Pepper to taste
Instructions
- Roasted the tomatoes and jalapeños using one of the methods described in the box below or your own best roasting method, reserving juices to add to salsa.
- Add jalapeños, garlic and 1/4 teaspoon salt to a food processor or blender. Process until you get a coarse paste, stopping to scrape down the sides a couple of times.
- Add tomatoes. Pulse a few times until you have a coarse-textured purée.
- Transfer mixture to serving bowl.
- Stir in any reserved roasting juices.
- Place chopped onion in a strainer. Rinse under running water. Shake off the excess water. Add rinsed onion to salsa.
- Add cilantro and vinegar.
- Stir gently, but thoroughly to mix. Add water, if needed, to give the salsa a thick, but easily spoonable, consistency
- Taste. Add more salt and pepper, to taste.

Roasting and Preparing the Tomatoes and Jalapeños
Instructions
Under a Broiler
- Lay tomatoes and jalapeños on lightly greased baking sheet.
- Place about 4 inches below a very hot broiler. Watching closely, roast until blistered and blackened on top side.
- Using a spoon or pair of tongs, flip the veggies and roast on another side.
- Continue until well roasted on all sides.
- Remove and allow to cool to the touch.
In a Skillet
- Place a heavy skillet over medium heat.
- Add 1 teaspoon oil.
- When oil is hot and shimmering, carefully place tomatoes and jalapeños into skillet.
- Roast, turning several times, until blistered, blackened on all sides and softened, about 10 minutes.
- Remove and allow to cool to the touch.
After Roasting with Either Method
- Peel the skins off of the tomatoes, collecting all the juices in a bowl as you do. Discard skins.
- Pull the stems from the chiles. Discard stems.
