Bob Evans Pot Roast Stroganoff Recipe
Ingredients
- 1 pound leftover Bob Evans Beef Pot Roast or other Beef Pot Roast shredded
- 1 cup Beef Broth or Water from cooking the Roast
- 1 can Cream of Mushroom Soup
- 1 cup Sour Cream
- Cooked Egg Noodles for serving
Instructions
- Place a large sauce pan over medium heat.
- Add beef and beef broth or cooking water. Cook stirring until warm.
- Stir in cream of mushroom soup. Bring mixture just to a boil - then reduce heat.
- Allow to simmer as you prepare your noodles,according to the directions on the package.
- When almost ready to serve, stir in the sour cream. Allow to simmer until hot. Do not boil, the sour cream may break and curdle.
- Place noodles on to serving plates or shallow bowls. Spoon stroganoff over noodles.
- Serve with additional sour cream on the side, if desired.
