P.F. Chang's Salt and Pepper Prawns Recipe
Ingredients
- P.F. Chang's Lime and Chilli Dipping Sauce (See the Recipe Box below for this Recipe)
- 1 tablespoon Szechwan Pepper
- 1 teaspoon Black Peppercorns
- 2 teaspoons flaked Sea Salt
- 2 tablespoons Rice Flour
- 1 1/2 pounds medium Green King Prawns shelled and cleaned, leaving tails intact
- 1/2 cup Peanut Oil
- 1 Lime cut into wedges
Instructions
- Prepare P.F. Chang's Lime and Chilli Dipping Sauce according to the recipe in the Recipe Box below. Set aside.
- Place Szechwan pepper and peppercorns in a small dry pan. Place pan over low medium heat. Dry roast for 2 minutes or until fragrant. Remove from heat and allow to cool.
- Once cool, grind roasted peppers, salt and rice flour until coarsely ground.
- Place prepared prawns in large bowl.
- Sprinkle with pepper mixture and toss to coat.
- Pour peanut oil in a wok or large skillet.
- Heat oil to medium high heat.
- Add a few prepared prawns, do not crowd, and fry for 2 minutes or until cooked through.
- Remove to a paper towel-covered plate to drain.
- Continue with remaining prawns, working in batches.
- Serve prawns immediately with P.F. Chang's Lime and Chilli Dipping Sauce and lime wedges to the side.

P.F. Chang's Lime and Chilli Dipping Sauce Recipe
Ingredients
- 2 1/2 ounces Brown Sugar
- 1 tablespoon Rice Vinegar
- 1 clove Garlic crushed
- 1 small fresh Red Chili finely chopped
- 1 tablespoon chopped Coriander Leaves
- 1/3 cup freshly squeezed Lime Juice
- Salt and freshly ground Black Pepper to taste
Instructions
- In a small frying pan add brown sugar and vinegar.
- Place over low heat and cook, stirring constantly, until sugar dissolves.
- Remove from heat and allow to cool.
- Once cooled, add garlic, chili, coriander and lime juice. Mix well.
- Taste. Add salt and pepper, to taste.
- This can be done in advance. Store in a tightly sealed container, in the refrigerator, until ready to use up to a month. Store leftover sauce the same way.
