Carrabba's Italian Grill Polenta Fries Recipe
Ingredients
- 5 cups Water
- 3/4 teaspoon Salt
- 1 1/2 cups Yellow Polenta
- 1/2 cup Romano cheese grated
- Extra Virgin Olive Oil for greasing and brushing
- Salt and freshly ground Black Pepper to taste
- 2 cups Marinara Sauce, warmed, for dipping, and/or other French Fry Dipping Sauces, of choice
Instructions
Prepare Polenta
- In a heavy-bottomed medium saucepan, add water and 3/4 teaspoon salt. Place over high heat and bring to a boil.
- When boiling, whisk in the polenta and bring back up to a simmer.
- Reduce heat to low and cook, whisking often, until polenta is tender and very thick (able to support a standing whisk for a few seconds), about 15 minutes.
- Remove from heat and add in the Romano cheese. Stir until cheese is melted and fully incorporated.
Chill Polenta
- Lightly oil a 13 x 9-inch baking dish.
- Using an oiled heatproof spatula, spread polenta in a smooth, thick layer in the dish.
- Cover with plastic wrap, and place in the refrigerator until chilled and firm, about 2 hours or overnight.
When Ready to Cook Polenta Fries
- Preheat the oven to 450°F.
- Lightly oil a rimmed baking sheet.
Cut and Bake Fries
- Invert the baking dish onto a cutting board and unmold the polenta.
- Using an oiled knife, cut the polenta into thirds lengthwise.
- Then cut across into fries about 1/2 inch wide.
- Transfer the fries to the prepared baking sheet.
- Brush lightly with oil.
- Place in preheated oven and bake until the underside is golden brown, about 20 minutes.
- Flip the fries using a metal spatula and continue baking until crisp and golden brown, 10 to 15 minutes more.
Season and Serve
- Season polenta fries with salt and pepper, to tasted.
- Heap fries on a platter and serve hot, accompanied by bowls of marinara sauce and/or plenty of other dipping sauces.
