Bertucci's Rigatoni Broccoli and Chicken Recipe
Ingredients
- 1 pound Rigatoni Pasta
- 4 ounces Olive Oil
- 1 pound boneless, skinless Chicken Breasts or Chicken Thighs cut into strips
- 4 cups Broccoli Florets separated and cut to bite-sided pieces
- 4 slices Lemon
- 2 teaspoon crushed Garlic
- 1 cup Chicken Broth
- 2 cups Light Cream
Instructions
- Prepare pasta according to package directions. Drain. Set aside.
- Add olive oil to a large skillet. Place skillet over medium high heat.
- When oil is hot and shimmering, add chicken pieces.
- Sauté chicken in hot oil until done.
- Add broccoli and lemon slices. Cook, stirring, for 1 minute.
- Add garlic. Sauté for 1 minute.
- Add chicken broth and cream. Cook until it begins to boil. Remove from heat. Place cooked rigatoni in a serving bowl or bowls.
- Spoon or pour prepared sauce over rigatoni, making sure, if you are spooning into individual bowls, to evenly distribute the chicken and broccoli pieces.
- Serve hot.

sauce is too liquidy, I had to add corn starch to thicken it up. Not too much flavor, added garlic salt and pepper to the recipe
