Abuelo's Sopapillas Recipe
Ingredients
- 1 cup All-Purpose Flour
- 1 1/2 teaspoons Baking Powder
- 1/4 teaspoon Salt
- 1 tablespoon Shortening
- 1/3 cup Warm Water
- Oil for frying
- Honey to finish, optional
- Confectioners' Sugar to finish, optional
- Ice Cream to serve, optional
Instructions
- In a large bowl, add flour, baking powder and salt. Mix well.
- Cut in shortening until mixture resembles fine crumbs.
- Gradually add water, tossing with a fork until a loose ball forms (dough will be crumbly).
- Place dough ball onto a lightly floured surface. Knead dough for 3 minutes or until smooth.
- Cover and let rest for 10 minutes.
- Roll out into a 12 x 10-inch rectangle.
- Cut into 12 squares with a knife or cut into 12 circles using a round biscuit cutter.
- Pour oil into a deep fryer, to a depth of 2 inches. Heat to 375°F.
- When oil is hot and shimmering, place prepared sopapillas into hot oil and fry for 1 to 2 minutes on each side.
- Remove from oil and drain on paper towels. Keep warm.
- Drizzle with honey and/or dust with confectioners' sugar, if desired.
- Serve by themselves or with ice cream, if desired.
