Abuelo's Sopapillas Recipe

Ingredients

  • 1 cup All-Purpose Flour
  • 1 1/2 teaspoons Baking Powder
  • 1/4 teaspoon Salt
  • 1 tablespoon Shortening
  • 1/3 cup Warm Water
  • Oil for frying
  • Honey to finish, optional
  • Confectioners' Sugar to finish, optional
  • Ice Cream to serve, optional

Instructions

  • In a large bowl, add flour, baking powder and salt. Mix well.
  • Cut in shortening until mixture resembles fine crumbs.
  • Gradually add water, tossing with a fork until a loose ball forms (dough will be crumbly).
  • Place dough ball onto a lightly floured surface. Knead dough for 3 minutes or until smooth.
  • Cover and let rest for 10 minutes.
  • Roll out into a 12 x 10-inch rectangle.
  • Cut into 12 squares with a knife or cut into 12 circles using a round biscuit cutter.
  • Pour oil into a deep fryer, to a depth of 2 inches. Heat to 375°F.
  • When oil is hot and shimmering, place prepared sopapillas into hot oil and fry for 1 to 2 minutes on each side.
  • Remove from oil and drain on paper towels. Keep warm.
  • Drizzle with honey and/or dust with confectioners' sugar, if desired.
  • Serve by themselves or with ice cream, if desired.
