Salt Creek Grille Blackened New York Strip Steak Recipe
Ingredients
- 16 ounces New York Strip Steak or Steaks neatly trimmed
- 2 tablespoons Vegetable or Blended Oil
- 1 tablespoon Achiote Paste (Find in a Mexican or Latin American Grocery Store or, maybe, the Latin American Aisle of your local Supermarket)
- 1 ounce Blackening Spice store bought or homemade, of choice
- Pinch Salt and freshly ground Black Pepper to taste
Instructions
- Place a cast iron pan on stove over medium heat and heat for 20 minutes.
- Place steak or steaks on a work surface.
- In a small bowl mix oil, achiote paste, blackening spice, salt and pepper together to form a paste. Cover steaks on both sides with paste, rubbing in with hands to fully coat.
- Carefully place steaks in hot pan. Sear each side for 8 minutes or until 110°F temperature is achieved.
- Remove from pan and let steak rest for 3 minutes before cutting and serving.

Steak Degrees of Doneness
- Rare: 95 – 105°F. Cool deep red center.
- Medium Rare: 115 – 125°F. Warm red center with a hint of pink.
- Medium: 130 – 140°F. Warm pink center.
- Medium Well: 150 – 160°F. Some pink in the center but mostly cooked through.
- Well: 165 – 175°F. No pink, cooked all the way through.
