The Capital Grille Peach and Blackberry Cobbler Recipe
Ingredients
Cobbler Dough
- 2 cups All-Purpose Flour
- 2 teaspoons Baking Powder
- Pinch Kosher Salt
- 1/2 cup granulated Sugar
- 4 tablespoons Unsalted Butter cut into 1/2-inch pieces
- 1/2 cup Buttermilk
Fruit Mixture
- 6 quarts Water
- 1 tablespoon unsalted Butter
- 8 - 10 fresh ripe Peaches
- 2 cups fresh Blackberries
- 1 tablespoon freshly squeezed Lemon Juice
- 1/2 cup granulated Sugar
- 2 tablespoons Cornstarch
Assembly
- 1/4 cup Heavy Cream
- 2 teaspoons Granulated Sugar
Instructions
Cobbler Dough
- Add flour, baking powder, salt, and 1/2 cup granulated sugar to a food processor. Pulse 2 times.
- Place 4 tablespoons unsalted butter into food processor. Pulse the mixture until butter is incorporated.
- While food processor is running, slowly add buttermilk until dough forms. Be careful not to over mix.
- Remove dough and wrap in plastic wrap. Place in refrigerator and chill for a minimum of one hour prior to use.
Fruit Mixture
- Preheat oven to 350°F.
- Add water to a large pot. Place over medium high heat and bring to a rapid boil.
- Use 1 tablespoon butter to grease an 8-inch glass baking dish. Set aside.
- Half fill a large bowl with ice. Add cold water to create an ice bath. Set aside.
- Using a paring knife, cut a small “x” into the bottom of each peach.
- Drop each peach into the boiling water for 20 seconds. Using tongs or a spider strainer, quickly move peaches to the ice bath to "shock" them.
- Once peaches are cool, remove the peels and seeds. Cut peaches into 1-inch chunks.
- Place prepared peaches in a large mixing bowl. Add blackberries, lemon juice, 1/2 cup granulated sugar and cornstarch. Very gently mix to combine.
- Pour fruit mixture into buttered baking dish. Set aside.
Assembly and Baking
- Remove the chilled dough from the refrigerator.
- On a lightly floured surface, roll dough out to about 1/2-inch thickness.
- Cut biscuits using a 2-inch diameter biscuit cutter.
- Arrange biscuits about 1/2-inch apart over top of the fruit mixture.
- Brush biscuit dough with heavy cream. Sprinkle with 2 teaspoons granulated sugar.
- Place cobbler on a sheet pan (to catch any juices that may boil over during baking).
- Place in 350°F oven and bake until the top is golden brown and juices are bubbling, about 25 to 30 minutes. Let cool slightly before serving.
- Serve warm.
