Pollo Tropical Balsamic Tomato Salad Recipe
Ingredients
- 2 pounds ripe Tomatoes seeded and cut into 1 1/2-inch pieces
- 1/2 medium Red Onion sliced into long thin wedges
- 3 Green Onion Stalks sliced at a diagonal 3/4-inch long
- 1/2 cup chopped fresh Basil Leaves
- 3/4 cup Balsamic Vinegar
- 1/4 cup Water
- 3 tablespoons Sugar
- 1/2 teaspoon Kosher Salt
- 1/4 teaspoon freshly ground Black Pepper
Instructions
- Place diced tomatoes, red onions, green onions and basil in a large mixing bowl.
- In a separate bowl, combine balsamic vinegar, water and sugar. Stir until the sugar has dissolved. Pour over tomato mixture.
- Sprinkle salt and black pepper over tomatoes. Use a spatula or large metal spoon to gently fold mixture together.
- Store, covered tightly, in a glass container in the refrigerator for at least 4 hours or, for best results, overnight, to allow the flavors to meld and develop.
