Fleming's Prime Steakhouse Peach Cobbler Recipe
Ingredients
Cobbler
- 2 1/2 pounds frozen Peach Halves thawed
- 3 ounces Salted Butter
- 3 1/2 ounces packed Brown Sugar
- 2 teaspoons ground Cinnamon
- 1 1/2 ounces Dried Cranberries
- 3/4 cup Peach Schnapps
- Vanilla Ice Cream for serving
Streusel Topping
- 3/4 pound All-Purpose Flour
- 1/4 pound Granulated Sugar
- 1/4 pound Brown Sugar
- 1/4 teaspoon Cinnamon
- 1/8 teaspoon Nutmeg
- 6 ounces Salted Butter cold, cut in 1-inch cubes
- 1 teaspoon Pure Vanilla Extract
Instructions
Streusel Topping
- Place all streusel ingredients - flour, granulated sugar, brown sugar, cinnamon, nutmeg, butter and vanilla - in mixer with a paddle attachment.
- Mix on medium 15 to 20 minutes. Mixture should bind together.
Cobbler
- Preheat oven to 350°F.
- Cut peach halves in half (making quarters or wedges).
- Place a pan big enough to hold peaches in single layer over on medium high heat.
- Add butter. Cook until light brown.
- Add peaches, brown sugar and cinnamon. Cook, stirring occasionally, for 8 to 10 minutes.
- Add cranberries and Schnapps. Cook, stirring, for 2 minutes.
- Pour peaches out onto a sheet pan. Set aside to cool for 10 minutes.
- Place peaches in a large, oven-safe casserole dish.
- Break streusel topping into 1/2 inch pieces. Sprinkle on fruit to cover.
- Place in preheated oven and bake for 20 to 25 minutes, or until topping is golden and crisp.
- Remove from oven and allow to cool slightly, about 10 minutes.
- Serve warm with vanilla ice cream.
