Anthony's Coal Fired Pizza Chicken Wings Recipe
Ingredients
- 5 pounds Chicken Wings, divided into drummets and wingettes (or peglegs and planks... or any other cute name you call them at home. 😉 ) Discard tips.
- 1/4 cup peeled cloves Garlic
- 2 tablespoons dried Rosemary
- 1/3 cup chopped Parsley
- 1/3 cup freshly squeezed Lemon Juice
- 1/4 cup Extra Virgin Olive Oil
- 1 teaspoon freshly ground Black Pepper to taste
- Kosher Salt to taste
- Caramelized Onions and Focaccia Bread for serving
Instructions
- Place chicken wings in a large nonreactive bowl or roasting pan.
- In a small bowl, add garlic, rosemary, parsley, lemon juice and black pepper. Whisk to mix well.
- Season with salt, to taste.
- Pour marinade mixture over wings, tossing to coat.
- Place in a tightly covered container, in the refrigerator, for 24 hours. Stir occasionally. Do not over-marinate.
- Preheat oven to 475°F.
- Remove wings from marinade allowing excess to drip off (Discard marinade).
- Place wings in a baking dish, single layer, skin side up.
- Place dish in preheated oven and cook for 25 minutes, turning wings over halfway through cooking process to brown both sides.
- Place on a single serving platter or several individual serving plates.
- Top with caramelized onions.
- Serve with focaccia bread wedges.
