Abuelo's Chile con Queso Recipe
Ingredients
- 1 pound Velveeta cut into 1/4-inch cubes
- 1/2 cup Whole Milk
- 1 tablespoon Butter
- 2 tablespoons diced Poblano Peppers seeded
- 2 tablespoons diced Jalapeños (Or more if more heat is desired) seeded and deveined
- 2 tablespoons diced Onions
- 2 tablespoons diced Red Bell Peppers
Instructions
- Place Velveeta and milk into a double boiler. Place over medium heat and melt cheese, stirring occasionally. (Alternately, place in a microwave proof bowl and microwave for approximately 45 seconds, stirring once.)
- Place butter in a sauté pan. Place over medium heat and melt. Do not burn.
- Add poblano peppers, jalapeños, onions and bell peppers. Cook until tender, being careful not to burn.
- Pour melted cheese mixture into a large bowl.
- Add vegetable mixture to bowl and, using a plastic spatula, fold together.
- Serve warm with tortilla chips.
