Ruth's Chris Steak House Key Lime Pie Recipe
Ingredients
Crust
- 1/2 cup Graham Cracker Crumbs
- 1/2 cup granulated Sugar
- 5 tablespoons Butter melted
Pie Filling
- 1 cup freshly squeezed or bottled Key Lime Juice
- 2 whole Eggs
- 1 tablespoon Lime Zest
- Two 14 1/2-ounce cans Condensed Milk
- Whipped Cream store bought or homemade, of choice
- 2 Key Limes thinly sliced
Instructions
Crust
- Preheat oven to 350°F.
- In a mixing bowl, add crumbs, sugar and melted butter. Mix with your hands until completely combined into a dough.
- Press crust mixture firmly into pie pan.
- Place pan in preheated oven. Bake until brown, about 20 minutes. Remove and allow to cool to room temperature.
Pie Filling
- Lower oven to 325°F.
- In another medium bowl, combine key lime juice, eggs, lime zest and condensed milk. Mix well with a mixer or whisk.
- Pour prepared filling into a cooled pie shell.
- Place in heated oven. Bake for 15 minutes.
- Remove from oven.
- Run a generous circle of whipped cream decorously around the rim of the pie.
- Place key lime slices decoratively onto the whipped cream around the rim of the pie.
- Place in a tightly covered container. Place in the refrigerator, overnight to chill or until ready to serve.
