Bahama Breeze Key Lime Pie Recipe
Ingredients
Graham Cracker Crust
- 2 1/2 cups Graham Cracker Crumbs
- 3 tablespoons Sugar
- 6 ounces Butter
- Nonstick Baking Pan Spray
Key Lime Filling
- Two 14-ounce cans Sweetened Condensed Milk
- 6 Egg Yolks
- 3/4 cup freshly squeezed Key Lime Juice
- 1/2 teaspoon Vanilla Extract
Meringue Topping
- 4 Egg Whites
- 1 1/2 cups Sugar
- 1/2 teaspoon Cream of Tartar
Instructions
- Preheat oven to 300°F.
Graham Cracker Crust
- In a small mixing bowl, combine cracker crumbs and sugar. Mix well.
- Melt butter on stovetop or in microwave. Add melted butter to crumbs mixture. Mix until evenly combined.
- Spray a 9-inch spring-form baking pan with nonstick spray.
- Pour 2 cups of crust mixture into pan. Firmly press crust around edges to form sides of crust.
- Add remaining crust in bottom of pan. Spread out evenly and press firmly to form the bottom.
Key Lime Filling
- In a medium mixing bowl, combine condensed milk, yolks and vanilla. Whisk to mix well.
- While whisking, slowly add lime juice.
- Pour filling mixture into crust, as needed.
Meringue Topping
- Place meringue ingredients into a kitchen mixer with beater attachments. Whip on high speed until firm peaks are formed, 3 - 5 minutes.
- Top pie with meringue and spread out over entire surface. Use a spoon to form peaks.
- Place pie in preheated oven. Bake pie 25 - 30 minutes. Watch carefully toward the end so you don't burn the meringue.
- Remove pie from oven. Set aside and let cool for 15 minutes at room temperature. Place in refrigerator until fully cooled.
- Serve well-chilled.
