Graham Cracker Crust
- 2 1/2 cups Graham Cracker Crumbs
- 3 tablespoons Sugar
- 6 ounces Butter
- Nonstick Baking Pan Spray
Key Lime Filling
- Two 14-ounce cans Sweetened Condensed Milk
- 6 Egg Yolks
- 3/4 cup freshly squeezed Key Lime Juice
- 1/2 teaspoon Vanilla Extract
Meringue Topping
- 4 Egg Whites
- 1 1/2 cups Sugar
- 1/2 teaspoon Cream of Tartar
Graham Cracker Crust
In a small mixing bowl, combine cracker crumbs and sugar. Mix well.
Melt butter on stovetop or in microwave. Add melted butter to crumbs mixture. Mix until evenly combined.
Spray a 9-inch spring-form baking pan with nonstick spray.
Pour 2 cups of crust mixture into pan. Firmly press crust around edges to form sides of crust.
Add remaining crust in bottom of pan. Spread out evenly and press firmly to form the bottom.
Key Lime Filling
In a medium mixing bowl, combine condensed milk, yolks and vanilla. Whisk to mix well.
While whisking, slowly add lime juice.
Pour filling mixture into crust, as needed.
Meringue Topping
Place meringue ingredients into a kitchen mixer with beater attachments. Whip on high speed until firm peaks are formed, 3 - 5 minutes.
Top pie with meringue and spread out over entire surface. Use a spoon to form peaks.
Place pie in preheated oven. Bake pie 25 - 30 minutes. Watch carefully toward the end so you don't burn the meringue.
Remove pie from oven. Set aside and let cool for 15 minutes at room temperature. Place in refrigerator until fully cooled.
Serve well-chilled.
