Ingredients

Graham Cracker Crust

  • 2 1/2 cups Graham Cracker Crumbs
  • 3 tablespoons Sugar
  • 6 ounces Butter
  • Nonstick Baking Pan Spray

Key Lime Filling

  • Two 14-ounce cans Sweetened Condensed Milk
  • 6 Egg Yolks
  • 3/4 cup freshly squeezed Key Lime Juice
  • 1/2 teaspoon Vanilla Extract

Meringue Topping

  • 4 Egg Whites
  • 1 1/2 cups Sugar
  • 1/2 teaspoon Cream of Tartar

Instructions

  • Preheat oven to 300°F.

Graham Cracker Crust

  • In a small mixing bowl, combine cracker crumbs and sugar. Mix well.
  • Melt butter on stovetop or in microwave. Add melted butter to crumbs mixture. Mix until evenly combined.
  • Spray a 9-inch spring-form baking pan with nonstick spray.
  • Pour 2 cups of crust mixture into pan. Firmly press crust around edges to form sides of crust.
  • Add remaining crust in bottom of pan. Spread out evenly and press firmly to form the bottom.

Key Lime Filling

  • In a medium mixing bowl, combine condensed milk, yolks and vanilla. Whisk to mix well.
  • While whisking, slowly add lime juice.
  • Pour filling mixture into crust, as needed.

Meringue Topping

  • Place meringue ingredients into a kitchen mixer with beater attachments. Whip on high speed until firm peaks are formed, 3 - 5 minutes.
  • Top pie with meringue and spread out over entire surface. Use a spoon to form peaks.
  • Place pie in preheated oven. Bake pie 25 - 30 minutes. Watch carefully toward the end so you don't burn the meringue.
  • Remove pie from oven. Set aside and let cool for 15 minutes at room temperature. Place in refrigerator until fully cooled.
  • Serve well-chilled.
