Ruth's Chris Steak House Banana Cream Pie Recipe
Ingredients
- Ruth's Chris Steak House Banana Cream Pie Filling (See the Recipe Box below for this Recipe)
- 1 or more small Pie Crusts store bought or homemade, of choice, baked as instructed on the packaging or recipe
- 1 Banana for each pie crust peeled and sliced 1/4-inch thick
- 1 tablespoon Sugar in the Raw for each pie crust to top
- 1/2 tablespoon Sugar in the Raw for each pie crust to serve
Instructions
- Spoon Ruth's Chris Steak House Banana Cream Pie Filling into crust(s).
- Cover and place in refrigerator for at least 2 hours and up to overnight to chill.
- Remove banana cream pie from refrigerator and place on counter.
- Slice a banana into 1/4-inch slices and shingle on top of pie, completely cover the top of the pie and crust (see photo above).
- Sprinkle 1 tablespoon sugar over the banana slices of pie(s).
- Place pie(s) on a baking sheet.
- Place in oven set to broil. Broil, watching very carefully, until the surface is evenly caramelized a light brown color.
- Place in the center of a serving plate(s).
- Sprinkle plate(s) with 1/2 tablespoon sugar and serve.

Ingredients
- 2 cups Ruth's Chris Steak House White Chocolate Pastry Cream (See the Recipe Box below for this Recipe)
- 1/4 cup Bols Crème de Banana
- 1 cup Cool Whip Whipped Cream
Instructions
- Combine whipped cream, liqueur and pastry cream. Whipped cream should be firm, not runny.
- Mix well.

Ruth's Chris Steak House White Chocolate Pastry Cream Recipe
Ingredients
- 1 gallon Whole Milk
- 3 Vanilla Beans split
- 12 ounces White Chocolate chopped
- 5 ounces Unsalted Butter
- 1/2 tablespoon Gelatin powder or granulated
- 2 cups Egg Yolks
- 3 cups Granulated Sugar
- 3 cups Cornstarch
Instructions
- Place milk in a large sauce pot.
- Slice vanilla bean in half and add to milk.
- Scald the milk. (Place the saucepan over medium heat. Heat, stirring frequently, until small bubbles appear around the outside of the saucepan, or the temperature registers 180 to 185°F.)
- Add chocolate and butter to a mixing bowl. Cover with plastic wrap.
- Place mixing bowl over a pot of boiling water, to melt.
- When butter and chocolate is just beginning to melt, mix with a whip to incorporate. Do not let the chocolate melt too much or the chocolate will break. Set aside.
- Place gelatin in a mixing bowl.
- Add 24 ounces hot scalded milk to the mixing bowl. Mix well to dissolve gelatin.
- Add this milk/gelatin mixture back into the scaled milk and mix well.
- Remove vanilla beans. Scrap out the seeds with a paring knife and add to milk.
- Add egg yolks, sugar and cornstarch to a mixing bowl Mix with a spatula then using gloved hands thoroughly incorporate.
- Slowly add a small amount of the hot milk to the mix to temper the eggs. Mix well. Then slowly add the egg mixture to the sauce pan with the milk and cook over low heat until the pastry cream is very stiff and the starch flavor is cooked out, approximately 25 minutes.
- When pastry cream is thick, remove from heat and slowly add the melted white chocolate and butter. Mix well to incorporate.
