Joe's Stone Crab Armand Salad Recipe
Ingredients
- Joe's Stone Crab Armand Salad Salad Dressing (See Box Below for this Recipe)
- 1 head Romaine Lettuce outer leaves removed and reserved for another use, remaining leaves washed, dried and torn into bite-sized pieces and chilled
- 1 small head Iceberg Lettuce outer leaves removed and reserved for another use, remaining leaves, washed, dried, torn into bite-sized pieces and chilled
- 1/2 cup chopped fresh Parsley
- 1/2 sweet white Onion sliced thin
- 1 pound Crab Meat picked over and shredded
- 1/2 cup freshly grated Parmesan Cheese + more for garnish
- 1 bag Garlic Croutons or about 30 homemade Garlic Croutons
- 2 ripe Avocados
- 1 Green Pepper cored and cut into thin slices, for garnish
Instructions
- Prepare Joe's Stone Crab Armand Salad Salad Dressing according to the recipe in the Box below. Set aside.
- To a large salad bowl, add lettuce, parsley, onion and 1/2 cup of Parmesan cheese. Toss gently to combine.
- Leave in bowl or place equal amounts of mixture into shallow salad bowls.
- Top with crab meat, spread in a thin layer to cover.
- Sprinkle with croutons and remaining Parmesan cheese.
- Starting at the top, with a very sharp knife, cut down into each avocado until you hit the pit. Cut completely around the avocado, top to bottom, touching the pit the entire time.
- Pull the two halves of the avocado apart and remove the pit with a spoon.
- Use the spoon to scoop the avocado out of the skin.
- Cut avocado into thin strips.
- Place avocado and green pepper strips on top of salad.
- Serve with prepared Joe's Stone Crab Armand Salad Salad Dressing.

Joe's Stone Crab Amand Salad Salad Dressing Recipe
Ingredients
- 2 small cloves Garlic
- 1/4 teaspoon Salt
- 1/2 teaspoon freshly ground Black Pepper to taste
- 1 teaspoon Mayonnaise
- 1/4 - 1/2 cup freshly squeezed Lemon Juice
- 1 teaspoon Red Wine Vinegar
- 1/4 cup + 2 tablespoons Olive Oil
Instructions
- Place peeled garlic cloves, salt and pepper, to taste, in a large salad bowl. Mash to a paste.
- Add mayonnaise. Mash and mix until smooth.
- Add lemon juice and vinegar. Mix well.
- Gradually add in olive oil, whisking to form a dressing.
- Store in a tightly sealed jar, in the refrigerator, until ready to serve.
