Ingredients

  • Joe's Stone Crab Armand Salad Salad Dressing (See Box Below for this Recipe)
  • 1 head Romaine Lettuce outer leaves removed and reserved for another use, remaining leaves washed, dried and torn into bite-sized pieces and chilled
  • 1 small head Iceberg Lettuce outer leaves removed and reserved for another use, remaining leaves, washed, dried, torn into bite-sized pieces and chilled
  • 1/2 cup chopped fresh Parsley
  • 1/2 sweet white Onion sliced thin
  • 1 pound Crab Meat picked over and shredded
  • 1/2 cup freshly grated Parmesan Cheese + more for garnish
  • 1 bag Garlic Croutons or about 30 homemade Garlic Croutons
  • 2 ripe Avocados
  • 1 Green Pepper cored and cut into thin slices, for garnish

Instructions

  • Prepare Joe's Stone Crab Armand Salad Salad Dressing according to the recipe in the Box below. Set aside.
  • To a large salad bowl, add lettuce, parsley, onion and 1/2 cup of Parmesan cheese. Toss gently to combine.
  • Leave in bowl or place equal amounts of mixture into shallow salad bowls.
  • Top with crab meat, spread in a thin layer to cover.
  • Sprinkle with croutons and remaining Parmesan cheese.
  • Starting at the top, with a very sharp knife, cut down into each avocado until you hit the pit. Cut completely around the avocado, top to bottom, touching the pit the entire time.
  • Pull the two halves of the avocado apart and remove the pit with a spoon.
  • Use the spoon to scoop the avocado out of the skin.
  • Cut avocado into thin strips.
  • Place avocado and green pepper strips on top of salad.
  • Serve with prepared Joe's Stone Crab Armand Salad Salad Dressing.
