Uncle Julio's Chipotle Borracho Shrimp Recipe
Equipment
- Wooden, Bamboo or Metal Skewers
Ingredients
- 1 cup Olive Oil
- 1 cup Soy Sauce
- 1 cup freshly squeezed Lime Juice
- 1/3 cup chopped Cilantro
- 1 teaspoon finely minced canned Chipotle Peppers in Adobo Sauce to taste (add more for extra heat)
- 1 tablespoon Light Brown Sugar
- 1 splash Grand Marnier
- 1 splash Tequila
- 2 pounds fresh Jumbo Shrimp about 24 shrimp, peeled, deveined and rinsed
- Lime Slices to garnish
Instructions
- If using wooden or bamboo skewers, soak in water for 1 hour before using.
- Combine all ingredients, except shrimp and lime slices, in a small mixing bowl. Whisk until well-mixed and smooth.
- Place 4 to 6 shrimp on each skewer.
- Place shrimp skewers in a shallow pan, long enough to lay skewers flat.
- Pour prepared marinade over shrimp. Allow to marinate for 10 to 15 minutes or longer while you start your grill.
- Heat grill to medium hot.
- Place skewers on grill and cook until shrimp are done.
- Serve with rice and garnish with slices of lime.
