Paradise Bakery Oatmeal Raisin Cookies Recipe
Ingredients
- 1 cup Butter softened
- 1 cup Sugar
- 1 cup Dark Brown Sugar
- 2 Eggs
- 1 teaspoon Vanilla
- 2 cups All-Purpose Flour
- 1 teaspoon Baking Soda
- 1/2 teaspoon Salt
- 2 cups Quick Cooking Oats
- 1 cup Corn Flakes
- 1 cup Sweetened Shredded Coconut
- 1 1/2 cup Raisins
Instructions
- Line 2 - 3 cookie sheets with parchment paper. Set aside.
- Preheat oven to 375°F.
- In a mixing bowl, cream together butter, sugar and brown sugar. Add egg and vanilla, Mix well.
- In a separate bowl, combine flour, baking soda and salt. Mix well.
- Add flour mixture to creamed mixture. Mix well.
- Stir in oats. Mix.
- Add corn flakes, coconut, and raisins. Mix well.
- Shape into 1 1/2-inch balls.
- Place cookie balls on parchment paper lined cookie sheets, about 2 inches apart. Flatten each cookie dough ball with the bottom of a glass dipped lightly in flour.
- Place cookie sheets in preheated oven and bake for about 8 to 10 minutes or until lightly browned.
- Remove from oven and allow to cool on the cookie sheet.
- Remove to a sealable container.
