Gulf Coast Restaurant-Style Masala Fried Chicken Recipe
Ingredients
- 1 cup plain Yogurt
- 1 tablespoon freshly squeezed Lemon Juice
- 1 tablespoon Ginger-Garlic Paste
- 1 teaspoon ground Cumin
- 1 teaspoon ground Coriander
- 1/2 teaspoon Turmeric
- 1 teaspoon Garam Masala
- 1/2 teaspoon Chili Powder
- 1 teaspoon Salt
- 1/2 teaspoon freshly ground Black Pepper to taste
- 2 pounds bone-in Chicken Thighs and Drumsticks or boneless, skinless Chicken Pieces of choice
- Coating
- 1 cup All-Purpose Flour
- 1/2 cup Cornstarch
- 1 teaspoon Salt
- 1/2 teaspoon Paprika
- 1/2 teaspoon Cayenne Pepper
- Oil for frying
- Serving
- Indian Sauce of choice (such as Mint-Cilantro Chutney, Spicy Tamarind Sauce, Creamy Tikka Masala Sauce, Kadai Gravy), to coat, if desired
- Mint Chutney or Cilantro Yogurt Sauce to serve
- Lemon Wedges to serve
Instructions
- In a bowl, add yogurt, lemon juice, ginger-garlic paste, cumin, coriander, turmeric, garam masala, chili powder, 1 teaspoon salt and pepper. Whisk to mix well.
- Add chicken pieces. Turn to coat fully.
- Cover and refrigerate 4 hours or overnight.
- When ready to cook, in a separate bowl, add flour, cornstarch, 1 teaspoon salt, paprika and cayenne. Mix well.
- Remove chicken from marinade and shake off excess.
- Dredge in flour mixture until well coated.
- Heat oil in a deep fryer or large pot to 350°F.
- Add breaded chicken pieces in batches and fry 10 - 12 minutes until golden brown and cooked through.
- Drain on paper towels.
- Toss with favorite Indian Sauce, if desired. (It is delicious just the way it is - but you do you.)
- Serve hot with mint chutney and lemon wedges.
