Texas Roadhouse Rockin' Fajitas Recipe
Ingredients
Marinade
- 1/2 cup Soy Sauce
- 1/4 cup freshly squeezed Lime Juice
- 2 tablespoons Olive Oil
- 2 tablespoons Worcestershire Sauce
- 2 cloves Garlic minced
- 1 teaspoon ground Cumin
- 1 teaspoon Smoked Paprika
- 1 teaspoon Chili Powder
- 1/2 teaspoon freshly ground Black Pepper
- 1/2 teaspoon Salt
- 1 tablespoon Brown Sugar
Fajitas
- 1 1/2 pounds Skirt Steak or boneless, skinless Chicken Breasts
- 2 tablespoons Vegetable Oil
- 1 Red Bell Pepper sliced
- 1 Green Bell Pepper sliced
- 1 Yellow Bell Pepper sliced
- 1 large Onion peeled and sliced
- 8 small Flour Tortillas
For Serving
- Sour Cream
- Guacamole
- Salsa
- Shredded Cheese
- Fresh Cilantro
- Lime Wedges
Instructions
- Add all marinade ingredients to a large, sealable bowl or zip-top bag. Whisk or shake bag to combine.
- Add steak or chicken, toss to ensure all pieces are fully coated. Cover and refrigerate for at least 4 hours or, preferably, overnight for best flavor.
- When ready to cook, heat a large cast-iron skillet or grill over medium-high heat.
- Remove meat from the marinade, allowing excess drip off. Discard marinade.
- Cook steak for about 4 - 5 minutes per side or chicken for 6 - 7 minutes per side until charred and cooked through. Remove from heat, cover loosely with foil, and let rest for 5 minutes before slicing thinly against the grain.
- In the same still-hot skillet, heat vegetable oil.
- Add sliced peppers and onions. Cook for 5 - 7 minutes, stirring occasionally, until softened and slightly charred.
- Remove from skillet to a serving plate.
- Warm the tortillas on the skillet for about 30 seconds per side (Alternately, heat in the microwave.)
- Serve fajitas with your favorite toppings, and enjoy the sizzling goodness of homemade Texas Roadhouse Rockin’ Fajitas!
