Ingredients

Marinade

  • 1/2 cup Soy Sauce
  • 1/4 cup freshly squeezed Lime Juice
  • 2 tablespoons Olive Oil
  • 2 tablespoons Worcestershire Sauce
  • 2 cloves Garlic minced
  • 1 teaspoon ground Cumin
  • 1 teaspoon Smoked Paprika
  • 1 teaspoon Chili Powder
  • 1/2 teaspoon freshly ground Black Pepper
  • 1/2 teaspoon Salt
  • 1 tablespoon Brown Sugar

Fajitas

  • 1 1/2 pounds Skirt Steak or boneless, skinless Chicken Breasts
  • 2 tablespoons Vegetable Oil
  • 1 Red Bell Pepper sliced
  • 1 Green Bell Pepper sliced
  • 1 Yellow Bell Pepper sliced
  • 1 large Onion peeled and sliced
  • 8 small Flour Tortillas

For Serving

  • Sour Cream
  • Guacamole
  • Salsa
  • Shredded Cheese
  • Fresh Cilantro
  • Lime Wedges

Instructions

  • Add all marinade ingredients to a large, sealable bowl or zip-top bag. Whisk or shake bag to combine.
  • Add steak or chicken, toss to ensure all pieces are fully coated. Cover and refrigerate for at least 4 hours or, preferably, overnight for best flavor.
  • When ready to cook, heat a large cast-iron skillet or grill over medium-high heat.
  • Remove meat from the marinade, allowing excess drip off. Discard marinade.
  • Cook steak for about 4 - 5 minutes per side or chicken for 6 - 7 minutes per side until charred and cooked through. Remove from heat, cover loosely with foil, and let rest for 5 minutes before slicing thinly against the grain.
  • In the same still-hot skillet, heat vegetable oil.
  • Add sliced peppers and onions. Cook for 5 - 7 minutes, stirring occasionally, until softened and slightly charred.
  • Remove from skillet to a serving plate.
  • Warm the tortillas on the skillet for about 30 seconds per side (Alternately, heat in the microwave.)
