Abuelo's Queso Diablo Dip Recipe
Ingredients
- 1 pound White American Cheese shredded, grated or chopped into small blocks for easier melting
- 1/2 to 1 cup Heavy Cream
- 2 cans diced Green Chilies undrained
- 1 can Rotel Original Salsa, Finely Chopped Tomatoes & Green Chilies chopped a bit for a better dip consistency
- 1 bunch Chopped Cilantro finely chopped, to taste
Instructions
- In a medium saucepan, add white American cheese. Place over low heat.
- Stir frequently to prevent scorching, allowing the cheese to melt gradually into a smooth consistency.
- Slowly pour in 1/2 cup of heavy cream, stirring continuously. If the queso is too thick, add more cream, a little at a time, until the desired consistency is reached.
- Stir in undrained diced green chilies and the chopped Rotel tomatoes with their juices. Mix well to evenly distribute the flavors.
- Once everything is heated through and well combined, stir in the chopped cilantro to taste.
- Remove from heat and serve immediately with tortilla chips, drizzled over nachos, or as a topping for tacos and burritos. If the queso thickens upon standing, gently reheat over low heat, stirring in a splash of cream, as needed.
