- 1 pound White American Cheese shredded, grated or chopped into small blocks for easier melting
- 1/2 to 1 cup Heavy Cream
- 2 cans diced Green Chilies undrained
- 1 can Rotel Original Salsa, Finely Chopped Tomatoes & Green Chilies chopped a bit for a better dip consistency
- 1 bunch Chopped Cilantro finely chopped, to taste
In a medium saucepan, add white American cheese. Place over low heat.
Stir frequently to prevent scorching, allowing the cheese to melt gradually into a smooth consistency.
Slowly pour in 1/2 cup of heavy cream, stirring continuously. If the queso is too thick, add more cream, a little at a time, until the desired consistency is reached.
Stir in undrained diced green chilies and the chopped Rotel tomatoes with their juices. Mix well to evenly distribute the flavors.
Once everything is heated through and well combined, stir in the chopped cilantro to taste.
Remove from heat and serve immediately with tortilla chips, drizzled over nachos, or as a topping for tacos and burritos. If the queso thickens upon standing, gently reheat over low heat, stirring in a splash of cream, as needed.
