Ingredients

  • 1 cup plain Yogurt
  • 1 tablespoon freshly squeezed Lemon Juice
  • 1 tablespoon Ginger-Garlic Paste
  • 1 teaspoon ground Cumin
  • 1 teaspoon ground Coriander
  • 1/2 teaspoon Turmeric
  • 1 teaspoon Garam Masala
  • 1/2 teaspoon Chili Powder
  • 1 teaspoon Salt
  • 1/2 teaspoon freshly ground Black Pepper to taste
  • 2 pounds bone-in Chicken Thighs and Drumsticks or boneless, skinless Chicken Pieces of choice
  • Coating
  • 1 cup All-Purpose Flour
  • 1/2 cup Cornstarch
  • 1 teaspoon Salt
  • 1/2 teaspoon Paprika
  • 1/2 teaspoon Cayenne Pepper
  • Oil for frying
  • Serving
  • Indian Sauce of choice (such as Mint-Cilantro Chutney, Spicy Tamarind Sauce, Creamy Tikka Masala Sauce, Kadai Gravy), to coat, if desired
  • Mint Chutney or Cilantro Yogurt Sauce to serve
  • Lemon Wedges to serve

Instructions

  • In a bowl, add yogurt, lemon juice, ginger-garlic paste, cumin, coriander, turmeric, garam masala, chili powder, 1 teaspoon salt and pepper. Whisk to mix well.
  • Add chicken pieces. Turn to coat fully.
  • Cover and refrigerate 4 hours or overnight.
  • When ready to cook, in a separate bowl, add flour, cornstarch, 1 teaspoon salt, paprika and cayenne. Mix well.
  • Remove chicken from marinade and shake off excess.
  • Dredge in flour mixture until well coated.
  • Heat oil in a deep fryer or large pot to 350°F.
  • Add breaded chicken pieces in batches and fry 10 - 12 minutes until golden brown and cooked through.
  • Drain on paper towels.
  • Toss with favorite Indian Sauce, if desired. (It is delicious just the way it is - but you do you.)
  • Serve hot with mint chutney and lemon wedges.
