Starbucks Banana, Walnut and Pecan Loaf Recipe
Ingredients
- 1 3/4 cups Bread Flour
- 2/3 cup Granulated Sugar
- 1/3 cup Light Brown Sugar packed
- 1 teaspoon Baking Powder
- 1/2 teaspoon Baking Soda
- 1/2 teaspoon Sea Salt
- 1/2 teaspoon Ground Cinnamon
- 1/4 teaspoon Ground Nutmeg
- 1 cup mashed ripe Bananas (about 2 to 3 Bananas)
- 1/2 cup Unsalted Butter softened
- 2 tablespoons Whole Milk
- 1 teaspoon Vanilla Extract
- 2 large Eggs
- 1/2 cup Walnuts chopped and divided
- 1/2 cup Pecans chopped and divided
Instructions
- Preheat oven to 350°F.
- Grease an 8 × 4-inch loaf pan and line with parchment paper.
- In a large bowl, whisk together flour, baking powder, baking soda, salt, cinnamon and nutmeg.
- In a separate bowl, cream butter, granulated sugar and brown sugar until light and fluffy.
- Add mashed bananas, eggs, milk and vanilla to the creamed mixture. Mix until smooth.
- Add 1/2 of the dry ingredients to the banana mixture. Stir gently.
- Add remaining dry ingredients, 1/4 cup walnuts and 1/4 cup pecans. Mix just until combined - do not overmix.
- Pour batter into the prepared pan.
- Sprinkle remaining 1/4 cup walnuts and 1/4 cup pecans evenly over the top.
- Place in preheated oven and bake for 55 to 65 minutes, or until a toothpick inserted in the center comes out clean.
- Remove from oven and cool in pan for 10 minutes. Then remove from pan to a wire rack to cool completely.
