Ingredients

  • 1 3/4 cups Bread Flour
  • 2/3 cup Granulated Sugar
  • 1/3 cup Light Brown Sugar packed
  • 1 teaspoon Baking Powder
  • 1/2 teaspoon Baking Soda
  • 1/2 teaspoon Sea Salt
  • 1/2 teaspoon Ground Cinnamon
  • 1/4 teaspoon Ground Nutmeg
  • 1 cup mashed ripe Bananas (about 2 to 3 Bananas)
  • 1/2 cup Unsalted Butter softened
  • 2 tablespoons Whole Milk
  • 1 teaspoon Vanilla Extract
  • 2 large Eggs
  • 1/2 cup Walnuts chopped and divided
  • 1/2 cup Pecans chopped and divided

Instructions

  • Preheat oven to 350°F.
  • Grease an 8 × 4-inch loaf pan and line with parchment paper.
  • In a large bowl, whisk together flour, baking powder, baking soda, salt, cinnamon and nutmeg.
  • In a separate bowl, cream butter, granulated sugar and brown sugar until light and fluffy.
  • Add mashed bananas, eggs, milk and vanilla to the creamed mixture. Mix until smooth.
  • Add 1/2 of the dry ingredients to the banana mixture. Stir gently.
  • Add remaining dry ingredients, 1/4 cup walnuts and 1/4 cup pecans. Mix just until combined - do not overmix.
  • Pour batter into the prepared pan.
  • Sprinkle remaining 1/4 cup walnuts and 1/4 cup pecans evenly over the top.
  • Place in preheated oven and bake for 55 to 65 minutes, or until a toothpick inserted in the center comes out clean.
  • Remove from oven and cool in pan for 10 minutes. Then remove from pan to a wire rack to cool completely.
