O'Charley's Fried Pickle Chips Recipe
Ingredients
- O'Charley's Old Bay Mayonnaise (See the Recipe Box below for this Recipe)
- 1 teaspoon Garlic Powder
- 1/2 cup Buttermilk
- 1/4 cup Frank's Hot Sauce, of other Hot Sauce of choice
- One 24-ounce jar Dill Pickles drained and dried on paper towels
- 1 gallon Canola or Vegetable Oil for frying
- 2 cups All-Purpose Flour
- 1 cup Cornmeal
- 1 teaspoon Salt
- 1 teaspoon freshly ground Black Pepper to taste
Instructions
- Prepare O'Charley's Old Bay Mayonnaise according to the recipe in the Recipe Box below. Set aside.
- In a medium bowl, add garlic powder, buttermilk and hot sauce. Mix well with a whisk.
- Add drained pickles. Marinate for at least 30 minutes.
- Preheat oil to 350°F in either a deep fryer or as measured by a fry thermometer in a large Dutch oven.
- To a large bowl, add flour, cornmeal, salt and pepper. Whisk to mix well.
- Add marinated pickles to the flour mixture. Toss to coat. Using hands, shake off excess flour and transfer to a wire cooling rack. Repeat until all pickles are breaded.
- Add pickles to oil using either the basket of your deep fryer or a spider strainer. Fry pickles in batches, until golden brown, about 4 - 6 minutes. Move around with either a wooden spoon or the strainer to prevent sticking.
- Transfer to a paper towel-lined plate to drain.
- Sprinkle with salt while hot.
- Serve with O'Charley's Old Bay Mayonnaise.

O'Charley's Old Bay Mayonnaise
Ingredients
- 1 large clove Garlic
- Salt
- 3/4 cup Mayonnaise
- 3/4 teaspoon Old Bay Seasoning
- 1 1/2 tablespoons freshly squeezed Lemon Juice
Instructions
- Peel and chop the garlic.
- Sprinkle garlic with a generous pinch of salt.
- Mash garlic to a paste with the side of a chef’s knife.
- Transfer to a small bowl.
- Add mayonnaise, lemon juice and Old Bay Seasoning.
- Taste. Adjust lemon juice and/or Old Bay, to taste, if needed.
