Ingredients

  • O'Charley's Old Bay Mayonnaise (See the Recipe Box below for this Recipe)
  • 1 teaspoon Garlic Powder
  • 1/2 cup Buttermilk
  • 1/4 cup Frank's Hot Sauce, of other Hot Sauce of choice
  • One 24-ounce jar Dill Pickles drained and dried on paper towels
  • 1 gallon Canola or Vegetable Oil for frying
  • 2 cups All-Purpose Flour
  • 1 cup Cornmeal
  • 1 teaspoon Salt
  • 1 teaspoon freshly ground Black Pepper to taste

Instructions

  • Prepare O'Charley's Old Bay Mayonnaise according to the recipe in the Recipe Box below. Set aside.
  • In a medium bowl, add garlic powder, buttermilk and hot sauce. Mix well with a whisk.
  • Add drained pickles. Marinate for at least 30 minutes.
  • Preheat oil to 350°F in either a deep fryer or as measured by a fry thermometer in a large Dutch oven.
  • To a large bowl, add flour, cornmeal, salt and pepper. Whisk to mix well.
  • Add marinated pickles to the flour mixture. Toss to coat. Using hands, shake off excess flour and transfer to a wire cooling rack. Repeat until all pickles are breaded.
  • Add pickles to oil using either the basket of your deep fryer or a spider strainer. Fry pickles in batches, until golden brown, about 4 - 6 minutes. Move around with either a wooden spoon or the strainer to prevent sticking.
  • Transfer to a paper towel-lined plate to drain.
  • Sprinkle with salt while hot.
  • Serve with O'Charley's Old Bay Mayonnaise.
