Acapulco Restaurant and Cantina Mexican Rice Recipe
Ingredients
- 2 tablespoons Lard or Neutral Oil
- 1 large Yellow Onion finely chopped
- 2 cups Long Grain White Rice rinsed and drained
- 2 cloves Garlic minced
- 1 teaspoon Ground Cumin
- 1 teaspoon Kosher Salt
- 1/4 teaspoon White Pepper
- 2 cups Low-Sodium Chicken Broth
- 1 cup Tomato Juice
- 1 cup canned Fire-Roasted Diced Tomatoes drained
- 2 tablespoons fresh Cilantro or Parsley chopped
Instructions
- Preheat oven to 350°F.
- Place lard or oil in a large skillet. Place over medium heat.
- When lard or oil is hot, add onion and rice. Sauté 8 to 10 minutes, stirring frequently, until rice is golden and onions are soft.
- Stir in garlic, cumin, salt and white pepper. Cook 1 minute until fragrant.
- In a separate saucepan, bring chicken broth, tomato juice and fire-roasted tomatoes to a gentle boil.
- Transfer rice mixture to a greased baking dish.
- Pour hot broth mixture evenly over the rice.
- Cover baking dish tightly with foil.
- Place dish in preheated oven and bake 25 to 30 minutes, or until liquid is absorbed and rice is fluffy.
- Remove from oven. Fluff with fork.
- Taste. Add more salt and pepper, to taste, if needed.
- Sprinkle with chopped cilantro or parsley and serve hot.
