Ingredients

  • 2 tablespoons Lard or Neutral Oil
  • 1 large Yellow Onion finely chopped
  • 2 cups Long Grain White Rice rinsed and drained
  • 2 cloves Garlic minced
  • 1 teaspoon Ground Cumin
  • 1 teaspoon Kosher Salt
  • 1/4 teaspoon White Pepper
  • 2 cups Low-Sodium Chicken Broth
  • 1 cup Tomato Juice
  • 1 cup canned Fire-Roasted Diced Tomatoes drained
  • 2 tablespoons fresh Cilantro or Parsley chopped

Instructions

  • Preheat oven to 350°F.
  • Place lard or oil in a large skillet. Place over medium heat.
  • When lard or oil is hot, add onion and rice. Sauté 8 to 10 minutes, stirring frequently, until rice is golden and onions are soft.
  • Stir in garlic, cumin, salt and white pepper. Cook 1 minute until fragrant.
  • In a separate saucepan, bring chicken broth, tomato juice and fire-roasted tomatoes to a gentle boil.
  • Transfer rice mixture to a greased baking dish.
  • Pour hot broth mixture evenly over the rice.
  • Cover baking dish tightly with foil.
  • Place dish in preheated oven and bake 25 to 30 minutes, or until liquid is absorbed and rice is fluffy.
  • Remove from oven. Fluff with fork.
  • Taste. Add more salt and pepper, to taste, if needed.
  • Sprinkle with chopped cilantro or parsley and serve hot.
