- 2 tablespoons Lard or Neutral Oil
- 1 large Yellow Onion finely chopped
- 2 cups Long Grain White Rice rinsed and drained
- 2 cloves Garlic minced
- 1 teaspoon Ground Cumin
- 1 teaspoon Kosher Salt
- 1/4 teaspoon White Pepper
- 2 cups Low-Sodium Chicken Broth
- 1 cup Tomato Juice
- 1 cup canned Fire-Roasted Diced Tomatoes drained
- 2 tablespoons fresh Cilantro or Parsley chopped
Preheat oven to 350°F.
Place lard or oil in a large skillet. Place over medium heat.
When lard or oil is hot, add onion and rice. Sauté 8 to 10 minutes, stirring frequently, until rice is golden and onions are soft.
Stir in garlic, cumin, salt and white pepper. Cook 1 minute until fragrant.
In a separate saucepan, bring chicken broth, tomato juice and fire-roasted tomatoes to a gentle boil.
Transfer rice mixture to a greased baking dish.
Pour hot broth mixture evenly over the rice.
Cover baking dish tightly with foil.
Place dish in preheated oven and bake 25 to 30 minutes, or until liquid is absorbed and rice is fluffy.
Remove from oven. Fluff with fork.
Taste. Add more salt and pepper, to taste, if needed.
Sprinkle with chopped cilantro or parsley and serve hot.
