Boston Beanery Cottage Fried Potato Cakes Recipe
Ingredients
- 2 cups Creamy Mashed Potatoes
- 1/2 cup soft Bread Crumbs
- 1 tablespoon finely chopped fresh Dill
- 1 teaspoon finely chopped fresh Thyme
- 2 Eggs beaten
- Salt and freshly ground Black Pepper to taste
- 2 - 3 tablespoons Butter
Instructions
- Add mashed potatoes, bread crumbs, dill, thyme and beaten eggs to a medium mixing bowl.
- Add a little salt and pepper, to taste. Mix well.
- Place butter in a large skillet.
- Heat skillet over medium low heat until butter has melted and gets hot. Do not burn.
- Drop in large spoonful of the potato mixture. Flatten them with a spatula. Repeat with more spoonfuls until skillet is full but not crowded.
- Cook over a gentle heat until the undersides of the cakes are light brown. Turn over with a spatula and brown the other side.
- Remove to a paper towel-covered plate to drain. Repeat with remaining mixture.
- Serve hot.
