Old Settler Pizza – Colorado’s Braided Beacon of Bold Flavor
Across Colorado’s mountain towns – most famously Idaho Springs – Beau Jo’s invented the “Mountain Pie” in 1973, a thick-crusted, braided-edge pizza meant to hold heavy toppings without sogging under pressure
The Old Settler variation layers bacon, roma tomatoes, artichoke hearts and red onion atop Monterey Jack and cheddar, all set on a sweet, honey-kissed sauce and dough. Served by the pound with honey on the side, it balances hearty, smoky toppings with the perfect touch of sweetness.
Beau Jo’s legacy stretches beyond Idaho Springs into Denver and beyond, becoming synonymous with Colorado-style pizza – thick, chewy, slightly sweet and always intended for sharing
Physically imposing yet flavorful, each pie combines mountain tradition with an inventive spirit. Diners love it for its generous toppings, sturdy braided crust, and that memorable drizzle of honey at the end.
This pizza isn’t just a meal – it’s a social statement: big enough to gather around, bold enough to stand out and rich enough to satisfy. Perfect for home cooks seeking mountain-sized flavor, this copycat Old Settler recipe brings the best of Beau Jo’s right into your oven.
