Hailing from a lineage of bakers in Eastern Turkey, Hakan’s passion for dough began in his uncle’s bakery. After moving to the U.S. in 2015, he honed his craft at Napa’s Model Bakery and later introduced his creations at the Napa Farmers Market under the Napa Baking Company banner. His dedication to fermentation and quality ingredients laid the foundation for Croccante’s unique offerings.
Croccante’s signature is its Detroit-style pizza: a thick, airy crust with caramelized cheese edges, achieved through a three-day fermentation process using imported Italian flour. Toppings range from classic pepperoni to inventive combinations like roasted potato and pancetta. For those seeking variety, the menu also features Chicago thin tavern-style pizzas, fresh salads, house-made meatballs, and garlic knots.
The pizzeria’s commitment to excellence hasn’t gone unnoticed. Croccante Artisan Pizza Garlic Knots Recipe
Ingredients
Dough
- 3 1/2 cups All-Purpose Flour (or “00” if preferred)
- 1 cup Warm Water
- 2 1/4 teaspoons 1 packet Active Dry Yeast
- 1 tablespoon Sugar
- 1 teaspoon Salt
- 1/4 cup Olive Oil
Garlic Butter
- 6 tablespoons Unsalted Butter
- 4 cloves Garlic finely minced
- 1 tablespoon fresh Parsley chopped
- 1/4 teaspoon Red Pepper Flakes
Toppings
- 2 tablespoons grated Parmesan Cheese
- Extra Olive Oil for brushing
Instructions
- In a large bowl, combine warm water, sugar and yeast. Let sit 5 - 10 minutes until foamy.
- Stir in olive oil and salt.
- Gradually mix in flour until a soft dough forms.
- Turn out onto a floured surface. Knead 8 - 10 minutes until smooth and elastic.
- Place dough in an oiled bowl, cover, and let rise in a warm spot for 1 - 1 1/2 hours, or until doubled.
- Punch down dough.
- Divide into 12 equal pieces.
- Roll each piece into a rope, about 8 inches long. Tie each "rope" into a loose knot.
- Place knots on a parchment-lined baking sheet. Cover lightly, and let rise 30 minutes.
- Preheat oven to 400°F.
- Brush knots lightly with olive oil.
- Place pan in preheated oven. Bake 12 - 15 minutes until puffed and golden brown.
- While knots bake, melt butter in a small saucepan.
- Add minced garlic. Cook 1 minute until fragrant.
- Remove from heat and stir in parsley and red pepper flakes.
- Brush warm knots generously with garlic butter.
- Sprinkle with grated Parmesan.
- Serve immediately.
