Ingredients
- Four 8-ounce Mahi Mahi Fillets
- 1/2 cup Legal Sea Foods Lemon Peel Mint Crust (See the Recipe Box below for this Recipe)
- 1 cup Legal Sea Foods Romesco Sauce (See the Recipe Box below for this Recipe)
Instructions
- Prepare Legal Sea Foods Lemon Peel Mint Crust according to the recipe in the Recipe Box below. Set aside.
- Prepare Legal Sea Foods Romesco Sauce according to the recipe in the Recipe Box below. Set aside.
- Preheat oven to 375°F. Lightly oil a shallow-sided baking pan.
- Place Mahi Mahi fillets on the prepared pan. Spread 2 tablespoons of Lemon Peel Mint Crust over each fillet.
- Place in preheated oven and roast for 15 minutes, or until the fish is cooked through and flakes easily with a fork.
- Remove from oven.
- Drizzle with Romesco Sauce and serve hot.

Legal Sea Foods Lemon Peel Mint Crust Recipe
Ingredients
- 1 cup Panko Bread crumbs
- 1 teaspoon fresh Garlic minced
- 2 tablespoons Lemon Peel minced
- 3 sprigs fresh Mint leaves only
- 2 sprigs fresh Parsley leaves only
- 1 teaspoon Kosher Salt
- 1/4 teaspoon cracked Black Pepper
- 2 tablespoons unsalted Butter melted
Instructions
- In a food processor, combine all ingredients except melted butter. Pulse until well combined.
- Drizzle in melted butter and pulse briefly to incorporate.
- This can be done in advance. Store in a tightly sealed container, in the refrigerator, until ready to use. Warm before using.
Legal Sea Foods Romesco Sauce Recipe
Ingredients
- 2 tablespoons Olive Oil
- 2 medium Onions thinly sliced
- 2 large cloves Garlic peeled and sliced
- 1/2 cup Red Wine Vinegar
- 1 1/4 cups sliced Almonds
- 1 can roasted Red Peppers drained
- 6 sprigs fresh Mint leaves only
- 4 sprigs fresh Parsley leaves only
- 1 tablespoon Kosher Salt
- 1 tablespoon Paprika
- 1 cup Water
Instructions
- Pour oil into a medium skillet. Place over medium heat.
- When oil is hot and shimmering, add onions. Sauté until golden brown, about 7 - 8 minutes. Add garlic. Cook for an additional 2 minutes.
- Deglaze pan with red wine vinegar, reducing the liquid for about 1 minute.
- Transfer contents to a food processor. Add the remaining ingredients and purée until smooth.
- This can be done in advance. Store in a tightly sealed container, in the refrigerator, until ready to use. Warm before using.
